Random Recipe #1: Couscous

I’m adding a new feature called the Random Recipe. I have a terrible habit of cooking new things, then forgetting the details when I try to replicate them six months down the line. Of course, I could just document them in Word, but then I wouldn’t have any hope of getting feedback from the rest of the world. Who knows what sorts of great ideas you might have out there in the vast unknown of the internet?

Today’s recipe: Couscous with Curried Apples

This one sounds a bit strange, and I’ll admit that I had my own doubts before embarking on this one, but it turned out surprisingly well. The fruits add a nice sweetness to the couscous and a controlled amount of curry adds more depth than outright flavor. My husband, who stared at me strangely when I explained what I was making, actually gave this his seal of approval after the first bite. I suspect that you could mix and match any sorts of dried fruits and nuts in this one, but I worked with what I had on hand.

1 medium apple, diced
1 Tbsp butter
curry powder to taste (a little goes a long way!)
1 cup whole wheat couscous
1 cup water
1/2 tsp salt
1/4 cup sliced almonds
dates (optional)
raisins (optional)

Saute apples in 1/2 Tbsp butter and curry powder until they begin to soften. Remove from pan.

Add remaining butter, salt and water to pan. Bring to a boil. Add couscous, stir. Cover and remove from heat. Allow to sit for 5 minutes, then fluff with a fork.

Stir in apples, nuts and other sweet dried fruits. Serve immediately.
