Random Recipe #2: Chipotle Salsa

In the long-delayed second installment of my Random Recipe series, I introduce my new Pantry Salsa. This was a quick and easy way to add a little class to taco night. It was a very experimental taco night tonight, and I have two recipes to add here.

This is made with canned tomatoes. Unless it’s tomato season in your area, canned will be much better quality than fresh. For more smoky flavor, add more of the adobo sauce from the can.

1 can diced tomatoes, drained
2-3 chipotle peppers, canned in adobo sauce
2 cloves garlic
1/2 onion
juice from 1 lime
salt and pepper to taste

Toss everything into a blender and puree. Taste. I’ve found that the lime counteracts saltiness, so if you’ve overdone the salt, add more lime to balance the flavor.
