If you ever have the sort of weekend afternoon where you don’t plan to go anywhere, you might want to make lazy beer and brats. It seems particularly appropriate on Super Bowl Sunday. Hey, they can’t all be classic, wow-the-guests recipes, can they? Sometimes you just have to fall back on something relatively effortless.
Ingredients
- 2 large onions, sliced
- 1 Tbsp butter
- Light olive oil
- 2 bottles/cans of beer (today’s was Trader Joe’s Simpler Times pilsner)
- 1 package bratwurst (today’s were Johnsonville beef brats)
Instructions
Sauté onions in butter and olive oil. Butter makes the onions caramelize nicely. Don’t say that butter should be avoided — we’re talking about a recipe that uses sausage. Let’s face it, the saturated fat from the butter is really not the issue.
Once the onions begin to cook down and turn golden, add beer. Watch your 3-year-old look on in horror as he shouts, “Beer isn’t an ingredient! It goes in a glass!”
Bring to a simmer. Add brats. Ignore for the entire afternoon until you’re ready to eat, preferably with fresh bread. If serving to a 3-year-old, wipe all traces of onion from the bratwurst an tell him it’s a hot dog.
Results: Thumbs up. “After I’m done with this one, can I have another hot dog? Maybe I can take the extras to school for lunch tomorrow. All of the kids will be jealous of my yummy hot dog lunch.”
